Flavor Strategies for Reduced-Sodium Formulations

Sodium chloride plays many functional roles in foods, including texture improvement, color enhancement and microbial control, as well as contributing to taste. Meeting consumers' flavor expectations in lower-sodium products is difficult, in part, because we don't know exactly how sodium works. Besides imparting a salty flavor, sodium chloride enhances other flavors in the food.
